Save A delightful fusion of creamy soda flavor and warming spices, these biscuit pops are a whimsical, sweet treat perfect for parties or afternoon tea.
I first made these biscuit pops for a birthday gathering, and they disappeared within minutes. Their blend of cream soda and spices makes for a playful, crowd-pleasing bite.
Ingredients
- Biscuits: 200 g (7 oz) digestive biscuits or graham crackers
- Filling: 60 g (1/4 cup) unsalted butter, softened, 100 g (1/2 cup) cream cheese, softened, 80 g (2/3 cup) powdered sugar, 2 tbsp cream soda concentrate or syrup, 1 tsp vanilla extract, 1/2 tsp ground cinnamon, 1/4 tsp ground nutmeg, 1/8 tsp ground allspice, Pinch of salt
- Coating: 200 g (7 oz) white chocolate, chopped, 2 tbsp cream soda concentrate or syrup (optional, for flavoring chocolate), Sprinkles, edible glitter, or crushed spiced biscuits (for decoration)
Instructions
- Crush Biscuits:
- Place the biscuits in a food processor and pulse until finely crushed. Transfer to a large bowl.
- Prepare Filling:
- In a separate bowl, beat together the butter and cream cheese until smooth. Add powdered sugar, cream soda concentrate, vanilla extract, cinnamon, nutmeg, allspice, and salt. Mix until fully combined.
- Combine & Shape:
- Add the crushed biscuits to the cream cheese mixture and mix until a dough forms. Roll the mixture into 16 even balls and place them on a parchment-lined tray. Chill in the freezer for 20–30 minutes until firm.
- Melting & Coating:
- Melt the white chocolate gently in a heatproof bowl set over simmering water (or in short bursts in the microwave). If using, stir in cream soda concentrate.
- Assembly:
- Insert a lollipop stick into each chilled ball. Dip each ball into melted white chocolate to coat, allowing excess to drip off. Decorate with sprinkles, edible glitter, or crushed biscuits while the coating is still wet.
- Chill & Serve:
- Place pops upright in a styrofoam block or stand on parchment-lined tray. Refrigerate until set, about 15 minutes.
