If using croissants, slice in half horizontally and hollow out the centers.

05 - Add broken lasagne sheets to the pot. Reduce heat and simmer 10–12 minutes, stirring occasionally, until pasta is al dente.
06 - While the soup simmers, combine ricotta, mozzarella, Parmesan, parsley, salt, and pepper in a mixing bowl. Blend well.
07 - Taste the soup and adjust seasoning as needed.
