# Preparation Steps:
01 - In a small saucepan, combine diced strawberries, maple syrup, and lemon juice. Cook over medium heat, stirring frequently, until the strawberries break down and the mixture thickens, approximately 8 to 10 minutes. Transfer to a bowl and allow to cool completely.
02 - In a medium bowl, combine rolled oats, Greek yogurt, milk, chia seeds, maple syrup, vanilla extract, and salt. Stir until all ingredients are evenly incorporated.
03 - Whisk the oat mixture vigorously for 1 to 2 minutes or use a hand mixer on low speed to incorporate air and achieve extra fluffiness.
04 - Spoon half of the oat mixture into two jars or glasses. Add a generous layer of cooled strawberry swirl. Top with the remaining oat mixture, then create additional swirls with the remaining strawberry sauce.
05 - Cover jars or glasses and refrigerate for at least 8 hours or overnight to allow flavors to meld and oats to absorb liquid.
06 - Remove from refrigerator in the morning. Top with fresh sliced strawberries, chopped nuts, seeds, or additional yogurt as desired. Serve immediately.
