01 - In a large bowl, whisk together flour, granulated sugar, and salt. Add cold cubed butter and use a pastry blender or your fingertips to cut the butter into the flour until the mixture resembles coarse breadcrumbs.
02 - Gradually add ice-cold water, mixing gently just until the dough comes together. Divide the dough in half, flatten each portion into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.

04 - On a lightly floured work surface, roll out one dough disk to approximately 1/8-inch thickness. Cut the dough into 8 rectangles, each measuring approximately 3 by 4 inches.
05 - Place 1 teaspoon guava paste and 1 teaspoon cream cheese mixture in the center of 4 rectangles, leaving a clear border around the edges.
06 - Brush the edges of the filled rectangles with beaten egg. Place the remaining 4 rectangles on top of the filled ones and press the edges firmly to seal. Use a fork to crimp the edges for a decorative finish.
07 - Transfer the assembled pop tarts to a parchment-lined baking sheet and refrigerate for 10 minutes.
08 - Preheat the oven to 375 degrees Fahrenheit. Brush the tops of each pop tart with egg wash and prick the surface with a fork to create steam vents during baking.
