01 - Heat a large nonstick skillet over medium-high heat. Add corn kernels and cook, stirring occasionally, until lightly charred in spots, approximately 5-7 minutes. Remove from heat and allow to cool slightly.
02 - In a large mixing bowl, whisk together sour cream, mayonnaise, lime juice, chili powder, smoked paprika, garlic powder, salt, and black pepper until a smooth consistency is achieved.
03 - Add the charred corn, cotija cheese (reserving a small amount for garnish), cilantro, and jalapeño (if using) to the bowl with the dressing. Toss gently to ensure the corn is evenly coated.
04 - Spoon the corn mixture into individual small cups or bowls.
05 - Generously sprinkle each cup with crushed tortilla chips for added crunch and the reserved cotija cheese.
06 - Garnish with additional cilantro and a light dusting of chili powder, if desired. Serve immediately with lime wedges on the side.
