01 - In a mixing bowl, blend cottage cheese and all-purpose flour together until a soft, cohesive dough is formed.
02 - Transfer dough onto a lightly floured work surface and knead for 2 to 3 minutes until smooth and elastic.
03 - Portion dough into 2 or 3 equal pieces. Roll each portion into a round flatbread approximately 1/4 inch thick.
04 - Heat a nonstick skillet over medium heat, or preheat oven to 450°F (230°C).
05 - Place shaped dough into the hot skillet and cook for 2 to 3 minutes per side, or bake directly on a parchment-lined baking tray for 6 to 8 minutes, until bread is golden and slightly puffed.
06 - Optional: Once cooked, brush with olive oil or melted butter and sprinkle with preferred herbs or spices. Cool slightly before serving or storing.
